Many hotel owners believe that having a restaurant inside the hotel is an advantage.<\/p>\n

They assume it will:<\/p>\n

    \n
  • \n

    attract more guests<\/p>\n<\/li>\n

  • \n

    generate additional revenue<\/p>\n<\/li>\n

  • \n

    and enhance the overall image of the hotel<\/p>\n<\/li>\n<\/ul>\n

    However, in reality, the opposite often happens.<\/p>\n

    A large number of hotel restaurants quietly lose money month after month.<\/p>\n

    What is even more surprising is that many owners do not realize this until the losses become too significant to ignore.<\/p>\n

    So the question is:<\/p>\n

    Why does this happen?<\/strong><\/p>\n

    After more than four decades of working in the hotel and restaurant industry, I have observed a pattern that repeats itself again and again.<\/p>\n

    Most hotel restaurants do not fail because:<\/p>\n

      \n
    • \n

      the food is bad<\/p>\n<\/li>\n

    • \n

      the chef lacks skill<\/p>\n<\/li>\n

    • \n

      or the location is poor<\/p>\n<\/li>\n<\/ul>\n

      They fail because the concept and business structure were never properly designed from the beginning.<\/strong><\/p>\n

      In many hotels, the restaurant exists simply because it is expected to exist.<\/p>\n

      People often say:<\/p>\n

      \n

      \u201cA hotel should have a restaurant.\u201d<\/p>\n<\/blockquote>\n

      So one is built.<\/p>\n

      But very few people stop to ask the most important questions:<\/p>\n

        \n
      • \n

        Who is the real target customer?<\/p>\n<\/li>\n

      • \n

        Are we serving hotel guests or outside customers?<\/p>\n<\/li>\n

      • \n

        What is the identity of the restaurant?<\/p>\n<\/li>\n

      • \n

        What makes this restaurant different from the hundreds of restaurants outside the hotel?<\/p>\n<\/li>\n<\/ul>\n

        When these questions remain unanswered, the restaurant begins its life without a clear strategy.<\/strong><\/p>\n

        And when a business starts without a strategy, the outcome is often financial loss.<\/p>\n

        Another common issue is that hotel restaurants are frequently designed to serve operational convenience rather than market demand.<\/strong><\/p>\n

        For example:<\/p>\n

          The hotel needs to provide breakfast for guests.<\/p>\n<\/li>\n

        • \n

          Room service is expected.<\/p>\n<\/li>\n<\/ul>\n

          As a result, the restaurant gradually becomes a service department for the hotel<\/strong> rather than a profit-driven business.<\/strong><\/p>\n

          This model may work for large international hotel chains with strong systems and high guest volumes.<\/p>\n

          However, for many independent hotels, the result is quite different.<\/p>\n

          The restaurant is busy in the morning during breakfast\u2026<\/p>\n

          \u2026and then remains quiet for the rest of the day.<\/p>\n

          The reality is simple.<\/p>\n

          A restaurant cannot survive on breakfast revenue alone.<\/strong><\/p>\n

          To truly succeed, a hotel restaurant must compete with all the restaurants outside the hotel.<\/p>\n

          And the restaurant industry today is one of the most competitive businesses in the world.<\/p>\n
